Instead of just grilling some meat, you grill a piece of slow cooked porchetta, which is a savoury, fatty, and moist boneless pork roast coming from the Italian cuisine. Refining it with some fig marmalade and sea salt, one gets delicious Italian-inspired BBQ. Another idea is lamb and capsicum souvlaki that is marinated in red wine, garlic and herbs. Local chef Jeremy Bangar is an expert at it.

2. BBQ USA or Germany or South Africa or …

It’s BBQ time, you go to the supermarket and don’t know what to get? Get a theme for your BBQ. As BBQ is popular around the world, you can experience with your friends a small trip on the grill. Take the Red, White and Blue for example – BBQ made is the USA. Make a chicken on a beer can and marinate it with some mouth-watering BBQ sauce. How about some BBQ chicken wings with blue dip sauce on the side? Want to grill like the Football World Champion – then get some ‘Weißwurst’ sausages and ice old beer of course.

3. Dress Up Meat

An alternative to buying very expensive meats is to spice them up a little. If you make BBQ patties yourself, you stuff them with cheese or BBQ sauce, creating a flavour explosion when your friends will eat them. Hot Dogs are always popular with kids – why don’t you cut them lengthwise, add cheese and herbs before wrapping them with bacon strips.

There are many ways to get creative with your BBQ meats – simply use what you have available. Another idea is to chop a few veggies, mix them with herbs, spices and a sauce, wrapping it all in aluminium foil. These veggies packs are extremely easy to prepare. Simply put the pack on the grill – eat it 15 mins later.

4. BBQ Canapés

Depending on the setting, you might want to consider canapés for your BBQ catering. If your BBQ party has a lot of people standing around and chatting, you can easily serve skewers. Try some pulled pork wraps on skewers with pickled onions. Or perhaps some crispy mushrooms straight from the grill with truffle mayo.

5. Grilled Fruit Dessert

Often heavily neglected, but fruits should also be part of every BBQ catering for friends. Not in the salad bowl, but on the grill. While bananas and pineapples are no secret for BBQ fans, many have never tried apples and watermelon. Serve it with balsamic dressing – however let your watermelon rest for a few minutes to cool off before you dig in.
