Fall is well on it's way, and with it comes some of the best seasonal veggies all year long. Though I'll miss strawberries and tomatoes, I'm so ready to nosh on some sweet potatoes and brussels sprouts.
Fall is also the time for super heavy foods. Football season means lots of dips and anything and everything buffalo. Then there's the holiest of all holidays: Thanksgiving! We're talking carbs on carbs with stuffing, casseroles, and my personal fave - mashed potatoes! It's cool because you can always throw on that oversized sweater to complete your Fall bod, but sometimes we crave something a little more virtuous.
Enter, the harvest bowl! Full of everything great fall has to offer, and none of the guilt! This thing will fill you up for all your favorite fall activities; apple picking, camping trips, and of course, tailgating.
It starts as any good bowl does, with a brown rice base. Next comes a melange of roasted fall vegetables; Brussels sprouts, red onion, and sweet potato, to be exact. Next to that comes a scoop of kale salad, beefed up with dried cranberries, almonds, and Parmesan cheese. Top it with a super delish homemade apple cider dressing for a little sweetness. Lastly, add a little grilled chicken for protein - or maybe some chickpeas or tofu if you're vegetarian - and you're good to go!
