Local favourites with a twist to savour this National Day 2020

Well-established dim sum restaurant Swee Choon has launched two new crab-laden National Day specials: mee suah kueh with chilli crab sauce (S$5) and lava bun with chilli crab filling ($8).The 58-year-old restaurant’s mee suah kueh is an original recipe developed by its second-generation owner. It has now been given a new spin with the addition of chilli crab sauce composed of chilli crab paste and generous chunks of crab meat.

This sauce uplifts the mee suah kueh which is essentially wheat vermicelli stir-fried with dried shrimps and Chinese sausage, then set in a mould, and deep-fried. The “kueh” is soft and flavourful on the inside and golden brown and crispy on the outside. Meanwhile, the lava bun with chilli crab filling ($8) is reminiscent of the fried mantou/buns that accompany Singapore's popular chilli crab. The oozy spicy chilli crab sauce within mingles deliciously with juicy crabmeat. Yan’s National Day highlights are available from now till 31 August (excluding 8 and 9 August). You can enjoy à la carte dim sum when you dine-in at lunchtime. Some of the highlights include the signature dim sum of steamed Hainanese chicken with sticky rice wrapped in lotus leaf ($4). This tasty pimped up chicken rice bundle is accompanied by chilli sauce, dark soya sauce, and ginger sauce.

Just as delicious is the steamed xiao long bao with white pepper soup ($5.80); the dumpling’s soup flavour is reminiscent of comforting bak kut teh broth. Singaporeans love their spicy kick. A dish that will satisfy their tastebuds is the deep-fried sambal crayfish roll ($12). Succulent crayfish is stir-fried with spicy sambal and wrapped in spring roll skin and deep-fried till crispy. Another punchy treat to tuck into is the pan-fried Singapore chilli crabmeat bun ($12).

Perfect for cosy family gatherings is the “Taste of Home” share pack at $55. This consists of selected dim sum and local dishes such as soya chicken and sautéed kway teow with prawns and fish cake. This special set is available for both self-collection and delivery (Island-wide delivery is available at a flat rate of $14 to one location. Summerlong

On 9 and 10 August, head to Summerlong for a meal along the Robertson Quay riverfront. This breezy spot will be rolling out local flavours with a Mediterranean twist. For brunch with a twist, tuck into the Nasi Lemak Soul-Vlaki ($18), filled with turmeric fried fish and coconut milk pilaf. This special creation is jazzed up with pickled cucumber, anchovy cream, sambal sauce, and peanuts. In the evenings, order the crispy soft shell crab served with orzo pasta ($31), which comes with a piquant chili crab sauce, kashkaval cheese, and herbs. Wash this down with a refreshing Summer Sling ($18) cocktails, made with aperol, pineapple, lime, Pimms, grenadine, cointreau, and soda. Summerlong's National Day menu is only available on 9 and 10 August.

Pink Fish

For something healthy yet delicious, try Pink Fish’s salmon and rice bowl livened up with chill crab sauce. This new-ish restaurant located at Jewel Changi showcases a variety of Norwegian salmon poke bowl options and other heathy creations.

In celebration of National Day, Pink Fish’s award-winning Norwegian chef-owner Geir Skeie has created this seasonal dish using salmon from Norway, but perked up with iconic Singapore flavours. For this Singaporean Salmon & Chilli Crab bowl (from $14.90), fresh tomatoes are incorporated as the base for the tomato sauce, and balanced with fresh chilli. The outcome is a tangy-sweet-spicy sauce. The bowl is complete with a refreshing side of pickled cucumber and carrots, grilled beancurd cubes and a wobbly onsen egg. This is seasonal dish is available from now until end August.

UbinEats, a virtual restaurant/ coffeeshop by the folks behind New Ubin Group, has just launched a range of ready-to-eat meals for one. What’s great is you have the convenience of placing these orders online and having them delivered to your doorstep.

There are five sub-brands under Ubin Eats: Ubin Nasi Lemak, Vijay Banana Leaf, Ah Koon Scissors Cut Curry Rice, Ah Ma Chicken Curry Noodles, and Ah Boon Signatures. The sets range from $12 to 18, and include plenty of accompaniments. For instance, the Ubin Nasi Lemak comes with sambal cuttlefish and ayam bakar (charcoal grilled chicken), plus hard-boiled eggs, anchovies and sliced cucumbers.

Vijay Banana Leaf features aromatic curries such as chicken masala served with basmati rice and raita. And Ah Koon Scissor Cut Curry Rice, offers breaded fried chicken with rice, lor bak (braised pork), braised bean curd, achar, alongside Hainanese vegetable curry.

Based at New Ubin Village in Tampines, UbinEats dishes are available for self-collection and islandwide delivery. There is a delivery fee of $10 with a $40 minimum spend.

Koma Japanese restaurant and sushi bar

Koma at Marina Bay Sands, known for its multi-sensory dining experience and fancy sushi creations, will be serving its elevated renditions of local dishes for lunch and dinner during this National Day weekend. A highlight in the menu is the Nasi Lemak Roll ($26), a maki roll loaded with Japanese cucumber, soft tamago, and crispy ikan bilis.

The Singapore-inspired sushi is coated in a piquant sambal sauce and topped with freshly shaved coconut snow. Pair this with Koma's take on the classic Singapore Sling ($22) concocted with Sawanotsuru Jyosen Honjozo sake, or the Raspberry Singapura ($16) comprising a crunchy rice crumble served with a raspberry-based “Singapore flag”. Koma's National Day specials are available from 7 to 10 August. Reservations are required.
