One Fattened Calf, one-north: “What makes this burger extraordinary is the homemade potato bun”

Good burgers are a rare find, especially in Singapore. I’m way past settling for sub-standard fast-food burgers (unless after a late-night party), yet it’s hard to find value-for-money quality burgers too. So, when my cousins recommended the three-week-old burger place, One Fattened Calf at Galaxis, I knew I had to check it out for myself.

Located right above one-north station within Galaxis, you’ll find the quaint space opened by husband-and-wife duo Joe and Corrine.

Right as you enter, you can tell how deep-rooted their passion is for burgers. The kitchen-to-dining area ratio easily looks six parts to four, which left me curious as to why the family-run business chose to do so. Well, only one way to find out.

What I tried

My companion and I went with the team’s best recommendations and waited for the magic to arrive. Out came two combo meals, with burgers wrapped unlike I’ve ever seen before. It looks just like an intricate dumpling wrapper, for one to carefully unwrap so the juices are kept in place without creating a mess as you indulge.

Here’s one Joe recommended—OFC Butterburger (S$15) with the combo at an additional S$4.90, which comes with a side of thick-cut OFC fries and Golden Lime Slushie. He claims his wife can eat this (almost) every day!

As the name suggests, the humble stack comes with two thick slabs of butter instead of traditional cheese slices. Highly recommended to be consumed for dine-in only, lest the butter melts if you opt for takeaway.

Oh boy, was this a stunner. While I doubted the swap for cheese with butter, this was one hunk of a stack so delightful, delicious, and decadent. I don’t even know where to start.

The burger patty was well-seasoned and wasn’t too smashed or crisp, which gave it a hearty bite. The pairing of charred onions and red onions added a crunchy texture to the fluffy stack with I thoroughly enjoyed. Yet, what sets this burger apart from the rest has to be the grass-fed butter and homemade potato buns.

First off, the butter slabs soaked into the soft potato bun to elevate the burger in richness. I mean, butter always pleases, albeit at a sinful cost. Yet, this would not be possible if it weren’t for the integrity of the bun to absorb it so perfectly, without creating a sloppy mess.

It was at this moment when Joe and Corrine shared that they indeed, compromised dining space for ovens, so they could freshly bake the potato buns daily in One Fattened Calf. To me, a good burger is one where all components stand out on their own, and these buns surely sealed the deal (and juices) for me.

Next up, the OFC Goldburger (S$18). Besides the 150g New Zealand premium grass-fed beef patty, you’ll find house-special pulled beef brisket, cheddar cheese, onions, pickles, and a special sauce.

Before you comment on the price here, the weight of this burger will contest your impression. We’re talking meat on meat with some heat from the special sauce, stuffed between freshly baked potato buns.

The brine from the tender pulled beef brisket introduced a striking flavour dimension and I totally dig it. The mix of sweet, salty and sour notes coupled with the spice from the special sauce, is one that’ll please burger enthusiasts and adventurers.

I can’t emphasize enough how the fluffy potato bun once again, comes through to impress. Just like how every camera can’t do without a photographer to capture moments, this burger would not be what it is without One Fattened Calf’s dedication towards homemade potato buns.

Don’t skip on the fries when you’re here at One Fattened Calf. Whether it’s OFC Fries served Original, Cheese, or Truffle, the thick-cut fries are a must to complete your meal with. If you ask me which I thought was the best of the three, I’d pick the old-school cheese fries in a heartbeat.

Passion is the genesis of genius and the team at One Fattened Calf surely holds it close to their heart. I’m certain with time we’ll see more variations and toppings (bacon, maybe?) but as long as the endearing team continues to bake those buns with love, every burger is bound to charm.
