Joe Bradley is spilling all about his new romance with Danielle Olivera.

The Southern Hospitality star, 28, couldn't help but gush about his Winter House belle while sitting down with PEOPLE between shifts at Republic Garden & Lounge in Charleston, South Carolina to discuss the upcoming second season of his hit Bravo series.

"It was an instantaneous connection," Bradley says of Olivera, 34, who he first met at BravoCon earlier this month in Las Vegas. "Before we even talked, we were making eye contact from across the room and you could tell there was some tension there. We were drawn to each other."

Bradley made no secret about his feelings, either. "That day, I was asked on a panel with some of the Winter House guys if I had my eyes on any other Bravolebrities and I just said Danielle, even though I hadn't spoken to her yet. I was like, 'That Danielle girl is really beautiful.' And she didn't even know I said that but the next night, we started making out and I took her back to my suite... "

"...And yeah," he says with a grin. "We had a great time."

About ten days later, the two were together again, with Bradley supporting Olivera in the audience during her Nov. 14 appearance on Watch What Happens Live with Andy Cohen.

"She invited me to New York and I thought she was just kind of saying it in the moment. Like, 'Oh yeah, you should come.' But two days later she was like, 'Hey, did you book your flight yet?' And I was like, 'Oh wow, she was serious!' " he recalls. "And then next thing I know, I was mic'ed up and sitting in the audience at WWHL."

"I thought she would want to keep me kind of low-key, because it's very soon, but WWHL kind of gave us a hard lunch," he says. "There's no turning back now. And that's okay, because I move fast, once I know I like someone."

That trip to New York City cemented for Bradley that there was something special between the two of them. "It went really well," he says. "She showed be around and as we walked through the streets of Brooklyn it was like, we just had nothing else. All our stresses went away. It was an amazing few days. It felt like we were in a movie."

"Danielle's beautiful, that goes without saying. But I really like that she's just unapologetically herself," Bradley tells PEOPLE. "She's been doing reality TV for years and you can see it hasn't changed her at all. She's still the girl who wants to go to a sports bar and grab a beer. She's still pursuing a career path outside of this industry. She's driven; she's going for what she believes in. And she's just so cool."

"I talk on [Southern Hospitality] about how all the girls in Charleston are the same. Danielle is one of a kind," he says.

Bravo viewers who tuned in to season 1 of Southern Hospitality know Bradley as the relationship-oriented guy of the group, who can be a bit of a hopeless romantic. It's something he says he's developed as he's gotten older.

"The past year or two, I've seen a definite shift," Bradley explains. "The older I get, the more I want something real. And I fall in love easily, which on the surface it might make me look like a player, but I'm really not like that. I really just, I love connecting with people. And nothing against some of the other guys in Charleston, but I don't really want to be in my mid-thirties and still be doing this lifestyle of taking a different girl home every weekend. I've kind of been there, done that. I'm over it."

"I think that's why I go after older girls because they know what they want," Bradley says. "Danielle, she's a girl who, she's wants something secure. We have a lot in common there."

Bradley and Olivera will next be together this weekend when she comes to visit him in Charleston after filming the Winter House reunion. "She'll get to see me in my natural habitat," he says. "And I'll get to show her around Charleston, which I love. That's why I work in hospitality; I love showing people how amazing this city is. So showing someone I like is going to be extra special."

"I get all giddy," Bradley continues, looking forward to the weekend with Olivera. "This is the first time ever I've flown a girl into town, and her first time she's been here, so I plan on pulling out all the stops. It's what she deserves."

"I've been thinking about her all the time," he says. "Wish me well with it!"

Season 1 of Southern Hospitality is now streaming on Peacock. Season 2 premieres Thursday, Dec. 7 (at 9 p.m. ET/PT) on Bravo, with episodes streaming on Peacock the next day.
